Peach Mead

I just made this one yesterday, so will update as it ferments out.

3 gallon batch

9# clover/wildflower honey from MN
Spring water to 3 gallons
8# frozen sliced peaches (thawed)
2 tsp pectic enzyme
Mixture of 1/3 fermaid K 2/3 DAP add 1/2 tsp at start, 1/2 tsp 24 hours after ferm starts, 1/2 tsp at 48 hours, and 1/2 tsp when about 3/4 of the way done fermenting.
2 Pack rehydrated lalvin 71b-1122 dry yeast
Serving: flapjack! Mocha, Wango-Tango
Primary: Gulag Baltic Porter

Man does that floating peach sludge look wicked nasty. I made the mistake of having SJ hold the lid of the carboy for me while I stirred in some nutrient. Maybe in a year she will forget how bad it looked and be willing to drink it?

Finally tried this again. Not a lot of peach flavor considering the amount of fruit in it. Tastes pretty good though. I might add a bit of extract to the bottle...

Peach is pretty delicate, both aroma- and flavor-wise....

Out of curiosity...how much fruit was it ?
