Chocolate?

Chocolate can also pair well with beer and i have been messing around with it a bit lately. My findings so far:
• bacon chocolate goes great with Smoked beers, duh, right? lol (Stone Smoked Porter, Aecht)
• Ginger Wesabi Chocolate that was incredible with Eric's sour (La Folie or Rouge from Ommegang would work well too i'm sure as far as commercials).
• Orange chocolate that is good with wits and tripels(i tried it with st. bernardus christmas ale and it didn't quite hold up). If you've ever had those
Peppridge farms Milano cookies, they have an orange one, that would be awsome here too. the orange chocolate i had tasted very similar to those.
• hazelnut and current chocolate is nice with some heavier stouts and Belgian darks/strongs.(I had it with Dark Horse Plead the 5th and want to try it
with some Matilda from Goose Island

I think i want to try some more of those Milano cookies with some more different beers. I know they have a lot of different flavors that could pair up nicely. I was thinking the raspberry ones with a stout.
I have a few more chocolates to work with also. I've had a few failures, but enough success to keep trying.

Any chance we could get you to do a beer and chocolate pairing for one of this year's presentations? We could probably use some club funds for chocolate purchase...

My wife would be in for that. She's a big chocolate fan, I'm guessing you and her buy some from the same places....she gets a lot from Vosges...

yeah, vosges is one of the brands I have been messing with.
Green & Black is one of the other brands i've been getting. (love the currant one and the organic espresso one)
There is another brand called "xoxoxo" or "chocolatelove"(and no i'm not talking about what Kent does with Pee Wee Herman) they have a cherry one and a dark chocolate raspberry i'm interested in. I haven't found a raspberry chocolate bar i am completely pleased with yet.
Endangered Species also has some bars that sound good. one with cranberries, one with blueberries, and also a raspberry one
NewTree fine Belgian chocolate is another on my list with lemon, cinnamon(lift bridge biscotti?), blackcurrant, Lavender(oro de calabaza or calabaza blanca, biere de mars or biere de garde?), and Apricot(Nugget Nectar)?
my pocket book will hurt trying these all out :P oh the shame... the pure pain of eating delicious chocolate and drinking great beer.... oh the pain.
anyone tried Endangered Species or NewTree before?

I've been wary of trying a mint chocolate, only thing i can think of that would stand up to it would be Choklat from Southern Tier. speaking of which... Creme Brulee would go great with a coffee chocolate bar.

now as i was writing this I just thought about a chocolate toffee bar with an oktoberfest... now i gotta try it. seems like a good combo. Toblerone? mmm
couple chile chocolates that might go well with smoked porters, scotch ale/wee heavy, or IPA's.
This is definately going to happen. I'll get my log book out and start making a list as I try some of these. i'll have to hire some help.

I've got a few Vosges bars (mainly the chili ones) in my cupboard--I'll do some recon too.
