Arrogant Bastard Clone

no, I haven't figured out how to make a copy of myself. but i did find a recipe for a clone of Stone Breweries "Arrogant Bastard"
I created a starter for it last night (500 ml starter because the wort should be 1.080~1.085 est OG)

I am using the Wyeast Pacman yeast. any of you used it before? It has a pretty strange smell... I hope that doesnt' come through much in the beer. of course that was smelling pure yeast too... yummmy :P

well, this is the recipe:
15 lb 2-row
.5 aromatic
.5 biscuit
.5 caramunic
.5 special B

hops
1 oz chinook 90 min(I am substituting warrior for one of these because i have an ounce leftover)
1 oz chinook 20 min
1 oz chinook 2 min
(i calculated about 54 IBU for this, but i'm thinking Arrogant Bastard is more like 70 or 80 IBU, so I might use 2 oz for the 90 minute boil) thoughts kind brewmasters?
*EDIT I calculated this again on another calculator, the chinook I have is 11% AA, it came out to 71 IBU... so that might be perfect

I'm going to use Single Infusion - Batch Sparge
why? cuz its easy for me to do it that way :)

and, I will probably have to use 2 pots for full boil... I really need a new pot.
I couldn't find leaf hops for chinook, only pellet, in the past I have had issues straining that hop sludge from the pellets out of my brew when moving it to my fermenter, any suggestions on good ways to do this without buying all kinds of new fangled technology? :)
I do have a nylon bag, but wouldnt' that kill the utilization?
I have heard that you can move the cooled wort to a fermenter, let the sludge settle, then rack it into the fermenter you are going to use leaving the sludge at the bottom of the other one, is that a good way to do it? will i lose any wort doing that?
sounds like a good way to get contamination letting it sit there long enough for tthe sludge to setlle and then moving it all over hell too.... all i know is i love using leaf hops or plug hops, i friggin hate pellet hops.

Sounds like a decent recipe.

I've been wanting to use that Pacman yeast to make a clone of Rogue Shakespeare Stout, I'd be interested to try your results.

I use a bag for my hops, since I have a run-through chiller that will clog up with hop debris. Haven't really noticed any decrease in hop utilization so far. Often people say to increase hop amounts by 10-15% if using a bag. I'm lazy and don't. You will still get a bit of fine debris and of course hot break protiens in the final result, so it won't be clear.

I reduced the recipe to about a 4.5 gallon boil. so it will be about a 3~3.5 gallon batch. here is a lovely picture of it fermenting like mad!! :twisted:

Looks like it was a good thing you used a blow off tube vs an air lock. ;)
